We just have to highlight our dinner concept! Together with our food guru, Johan Nystedt, we’ve created evenings filled with fantastic food, local wines, and a wonderful sense of community. As a little teaser, we had a chat with Johan about what to expect at the table and which dish is his personal favorite.

Tell us a little about yourself and your role with us.

– My name is Johan and I work creatively with food experiences. That means everything from creating menus and drink pairings to building structure and coaching the team.

What can guests expect from a dinner with us?

– Our dinners are more than just food; they’re a way to connect with people. We start with small bites, often with a local touch, but sometimes we travel culinarily – it can just as well be guacamole and nachos as sardines and olives. The main course is often cooked outdoors. There’s the smell of the grill, toasts being made, and lots of laughter. We always finish with something sweet.

It’s relaxed, yet well thought out, and the goal is for every guest to leave the table a little fuller, a little happier, and with at least one new conversation in their pocket.

Tell us more about the wines we serve with the meals!


– We work with small, local producers within about an hour’s drive from the camp. Here you’ll find both fresh, Atlantic-style wines and warmer-climate wines from the inland. The focus is on sustainability, craftsmanship, and history. It should always feel personal and never random.

Which dinner is your personal favorite, and why?


– One of my absolute favorites is char-grilled secreto from Portuguese pork with a spicy mojo rojo. It’s rustic and when you pair it with a chilled local red wine it’s just unbeatable. That dish really captures what we want to create here: local, delicious and with maximum comfort.
